serves 4-6

Inspired by my good friend Chef Inger, a perfect side for any meal

1 red carrot
1 yellow carrot
1 orange carrot
1 parsnip
10-12 pieces of broccoli
1/2 sliced onion
1 yukon gold potato
1 orange beet

Take out vegetables and cut them up into bite size pieces or a bit larger size . Coat casserole dish with oil of choice (grapeseed, olive, coconut, sunflower).  Drizzle 2 tbs oil onto mixed and cut up vegetables. Sprinkle with Herbamare seasoning or seasoning mix of choice.
Cook uncovered at 375 degrees for 45 minutes .
